How to Always Have Healthy Meals.. Even on Your Busiest Days

I know a lot of people struggle with coming up with meals when they are too busy to cook. 

I get it! I’ve been there. I thought I would create a post to share with you a a couple of my own strategies for dealing with this issue.   

I have TWO WORDS for you when it comes to meals for busy days. 

It’s to BE PREPARED! 

That’s right. The Scout motto will help save the day when it comes to your meals on busy nights! 

Here are some things that I recommend when you don’t always have time to cook an entire meal. 

  • Make double batches of your weeknight meals and use them for lunches/leftovers, or you freeze them.
  • Roast a chicken in the slow cooker on the weekend so you have chicken all week. Use a rice cooker to make rice/quinoa, or you use canned beans.
  • Prep your veggies as soon as you come home.
  • Use frozen veggies as much as possible in your meals because they’re cheap and nutritious, and they don’t go bad. 

As you can see, the whole idea is to BE PREPARED ahead of time! 

You never know when your schedule might get thrown out of whack, especially if you have kids, own a business, or have a lot of family obligations! 

It’s always a good idea to play DEFENSIVELY and have something on-hand for those weeknight emergencies!
